Situated in the historic Santa Cruz Mountain appellation, Byington Winery has adopted the challenge of winemakers of the late 1900's as its own - to grow and produce wines of extraordinary character and quality. Don Blackburn, Byington's winemaker, crafts elegant and distinctive Santa Cruz Mountain appellation Pinot Noir, Chardonnay and Cabernet Sauvignon. Production also includes varietals from the best of California's wine growning regions including the Napa Valley, Sonoma, Santa Barbara and San Luis Obispo Counties.

Estate Vineyard
The Byington Estate vineyard is planted exclusively to Pinot Noir at a 2000 foot elevation on the edge of a steep ridge in the Santa Cruz Mountains. Preferring a cooler climate, Pinot Noir vines thrive in the cool mountain air of the Santa Cruz Mountains. The close proximity of the Monterey Bay also makes for milder Spring temperatures and therefore contributes to an earlier bud break and concomitant longer growing season.
Byington Vineyard is closely spaced with only 4 feet between vines - which although more expensive to plant and maintain, pays benefits in grape and wine quality. The vineyard is hand harvested to ensure that only quality clusters are selected for the crush. This degree of quality control in the vineyard, exemplifies our commitment to excellence in our winemaking.
